Making Meals Monday

Okay - so this week I am just going to post the cookie recipes I mean to post last week.  Our week is totally crazy with the holiday today, and my school being off on Thursday, and Mat being gone two days this week.  So - here are the yummy cookie recipes from our family friend, Loretta!  Enjoy!

CHERRY CHOCOLATE CHIP COOKIES(makes about 3 ½ doz)

1 Betty Crocker Cherry Chip Cake Mix
½ cup oil
¼ cup water
¼ cup flour
1 egg
1 bag mini chocolate chips(I use only 1 bag)

Mix above ingredients together in a bowl
Drop by teaspoon onto greased(or sprayed) cookie sheet
Bake at 350 degrees for 10-12 minutes or until lightly browned
 Cool slight before removing from cookie sheet


CHOCOLATE CRACKLES(makes about 5 doz)

*4 oz. unsweetened chocolate
½ cup Crisco oil
2 cups granulated sugar(I use 1 ½ cups)
4 eggs
2 teas. vanilla
2 cups flour
2 teas. baking powder
½ teas. salt
½ c. nuts, chopped finely- optional
2/3 c. powered sugar

Melt chocolate
Blend in oil and sugar
Add eggs one at a time
Beat well
Add vanilla
Sift together: flour, baking powder and salt
Stir into chocolate
Add nuts
Mix well
Chill Well
Shape into balls and roll in powdered sugar
Place onto greased cookie sheet
Bake 10-12 minutes in 350 degree oven

*Substitution for 1 square chocolate- use 3 tabls. Cocoa and 1 tabls. Butter or  margarine.

WALNUT FROSTIES- (makes about 3 /12 to 4 do.)

2 ½ cups flour
½ teas. soda
¼ teas. salt
¼ cup butter or margarine
1 cup brown sugar (I used ¾ cup)
1 egg
1 teas. vanilla

TOPPING

1 cup chopped walnuts(finely chopped)
¼ cup sour cream
½ cup brown sugar

Preheat oven to 350 degrees
Combine flour, soda and salt
Cream butter or margarine and sugar
Add egg and vanilla and beat until light and fluffy
Place on ungreased cookie sheet
Make a depression in center of each cookie
Mix together the 3 ingredients for topping and place 1 teas. of topping on each cookie
Bake 10-12 minutes

If dough is crumbly add 1 more teas. vanilla and/or 1 teas. water.  Dough not real moist.
