Making Meals Monday

Here are this weeks menu items at Pletcher Cafe. Eat at your own risk. :)

Marinated Grilled Shrimp

Ingredients

  • 3 cloves garlic, minced
  • 1/3 cup olive oil
  • 1/4 cup tomato sauce
  • 2 tablespoons red wine vinegar
  • 2 tablespoons chopped fresh basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 pounds fresh shrimp, peeled and deveined
  • skewers
Directions

  1. In a large bowl, stir together the garlic, olive oil, tomato sauce, and red wine vinegar. Season with basil, salt, and cayenne pepper. Add shrimp to the bowl, and stir until evenly coated. Cover, and refrigerate for 30 minutes to 1 hour, stirring once or twice.
  2. Preheat grill for medium heat. Thread shrimp onto skewers, piercing once near the tail and once near the head. Discard marinade.
  3. Lightly oil grill grate. Cook shrimp on preheated grill for 2 to 3 minutes per side, or until opaque.

Sweet and Tangy Glazed Salmon

Ingredients

  • 6 tablespoons butter
  • 1 1/2 cups brown sugar
  • 4 1/2 tablespoons lemon juice
  • 2 1/4 teaspoons dried dill weed
  • 3/4 teaspoon ground cayenne pepper
  • 1 pound salmon fillets, with skin
  • lemon pepper to taste
Directions

  1. Preheat an outdoor grill for high heat.
  2. Melt the butter in a saucepan over medium heat, and mix in the brown sugar, lemon juice, dill, and cayenne pepper. Cook and stir until the brown sugar is dissolved. Reduce heat and simmer until ready to brush onto the salmon.
  3. Season salmon with lemon pepper, and place directly on the grill grate, skin side down. Brushing frequently with the butter and brown sugar glaze, cook the salmon 20 minutes, or until easily flaked with a fork. Reserve some of the glaze for serving.

Best Chicken Ever

Ingredients

  • 6 skinless, boneless chicken breasts
  • 2 cups sour cream
  • 2 cups crushed cornflakes cereal
  • 1 teaspoon Italian-style seasoning
  • 6 tablespoons butter, melted
Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Rinse and trim the chicken breasts. Pat dry. Generously coat both sides of each breast with sour cream. Put crushed cornflake crumbs in a shallow plate or bowl and season to taste (I use onion salt and garlic salt). Dip the sour cream coated chicken in the seasoned cornflake crumbs.
  3. Place coated chicken in a lightly greased 9x13 inch baking dish. Drizzle with melted butter/margarine and bake in the preheated oven for 1 hour.

FYI- They make Kellogg's Cornflakes Crumbs. Look for it in the breadcrumb aisle. Easier than smashing all of those corn flakes!
