Making Meals Monday

So this week, I am only making two new things and having pasta on the 3rd night. Mostly because we are having company this week starting on Wednesday night, and I won't have to cook the rest of the week!

Here are my two new recipes

Smoked Salmon Pizza

Ingredients
  • 1 (12 inch) pre-baked pizza crust
  • 1 tablespoon olive oil
  • 1 cup smoked salmon, cut into 1/2 inch pieces
  • 1/2 (6 ounce) jar marinated artichoke hearts, drained and quartered
  • 2 tablespoons chopped sun-dried tomatoes
  • 2 cups shredded mozzarella cheese
Directions
  1. Preheat an oven to 400 degrees F (200 degrees C).
  2. Spread the olive oil over the pizza crust, then sprinkle with the smoked salmon, artichokes, and sun-dried tomatoes. Sprinkle the mozzarella cheese evenly over the pizza.
  3. Bake in the preheated oven until the cheese has melted and is bubbly, 10 to 15 minutes.
**hint - use fresh garlic as well and some Italian seasoning

Meatloaf - with a little Southwest Style

Ingredients
  • 1 1/2 pounds ground beef
  • 2 eggs
  • 1/2 cup chopped onion
  • 1/2 cup Italian bread crumbs
  • 1/2 cup salsa
  • 1/4 cup ketchup
  • 1/4 cup barbeque sauce
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Directions
  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Mix the ground beef, eggs, onion, bread crumbs, salsa, ketchup, barbeque sauce, salt, pepper, together in a bowl; transfer to a loaf pan.
  3. Bake in the preheated oven until golden brown on top, about 1 hour.

That pizza sounds yummy! Too bad my husband has sworn off salmon :-(
